1 lb boneless, skinless chicken breast, diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon chili powder

Salt and pepper to taste

1 cup cooked brown rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup shredded cheese (cheddar or a Mexican blend)

½ cup salsa

4 large flour tortillas

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the diced chicken with olive oil, smoked paprika, cumin, garlic powder, onion powder, chili powder, salt, and pepper. Mix well and let it marinate for at least 15 minutes.

    Cook the Chicken: Preheat your air fryer to 380°F (190°C). Place the marinated chicken in the air fryer basket in a single layer. Air fry for about 10-12 minutes, shaking the basket halfway through, until the chicken is fully cooked and has a nice golden color.

      Prepare the Filling: In a large mixing bowl, combine the cooked brown rice, black beans, corn, shredded cheese, salsa, and the cooked chicken. Stir until everything is evenly mixed.

        Assemble the Burritos: Lay a flour tortilla flat on a clean surface. Add about ½ to ¾ cup of the chicken filling in the center of each tortilla. Fold in the sides and roll tightly from the bottom to form a burrito. Repeat with the remaining tortillas and filling.

          Crisp the Burritos: Place the assembled burritos seam-side down in the air fryer basket. Air fry at 380°F (190°C) for about 8-10 minutes, or until the burritos are crispy and golden brown, flipping them halfway through for even crispiness.

            Serve: Remove the burritos from the air fryer and let them cool slightly. Cut in half and sprinkle with fresh cilantro if desired. Serve with sour cream on the side.
