Ingredients

1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp cayenne pepper (optional for extra heat)

Salt and pepper to taste

Cooking spray

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tsp Sriracha (adjust to taste)

1 tsp lime juice

1 tsp chopped fresh cilantro (for garnish)

Instructions

Prepare the Shrimp: In a medium bowl, soak the shrimp in buttermilk for at least 30 minutes to tenderize and flavor the shrimp.

Mix the Coating: In a separate large bowl, combine the panko breadcrumbs, flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well to combine.

Bread the Shrimp: Remove the shrimp from the buttermilk and allow the excess to drip off. Dredge each shrimp in the breadcrumb mixture, pressing gently to ensure the coating adheres.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Shrimp: Spray the air fryer basket with cooking spray. Arrange the breaded shrimp in a single layer, ensuring they are not overcrowded. Lightly spray the tops of the shrimp with cooking spray. Air fry for 8-10 minutes, shaking the basket halfway through, until the shrimp are golden brown and crispy.

Make the Bang Bang Sauce: While the shrimp are cooking, mix the mayonnaise, sweet chili sauce, Sriracha, and lime juice in a small bowl until smooth. Adjust the heat by adding more Sriracha if desired.

Serve: Once the shrimp are done, remove them from the air fryer and toss them in a bowl with the Bang Bang sauce, ensuring they are evenly coated. Garnish with chopped cilantro.

Enjoy: Serve immediately with extra sauce on the side for dipping, and perhaps a wedge of lime.
