Ingredients

1 can of black beans, drained and rinsed

1 can of corn, drained

1 can of diced tomatoes with green chilies

1 can of diced tomatoes

1 can of chickpeas, drained and rinsed

1 can of chicken (or 2 cups cooked shredded chicken)

1 can of taco sauce

2 cups chicken broth

1 tablespoon taco seasoning

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, lime wedges

Instructions

In a large pot over medium heat, add the chicken broth, diced tomatoes (with and without chilies), taco sauce, and drained black beans. Stir to combine.

Add the corn, chickpeas, and shredded chicken (if using canned chicken, add it directly). Mix all the ingredients thoroughly.

Sprinkle in the taco seasoning, onion powder, garlic powder, salt, and pepper to taste. Stir well.

Bring the mixture to a gentle boil, then reduce heat to low, cover, and let it simmer for about 15-20 minutes, allowing the flavors to meld together.

Taste the soup and adjust seasoning if needed. If you prefer a spicier soup, add a pinch of chili powder or cayenne pepper.

Once the soup is heated through, ladle it into bowls and garnish with your choice of toppings such as shredded cheese, sour cream, diced avocado, chopped cilantro, and a squeeze of lime juice for freshness.

                - Presentation Tips: Serve the soup in vibrant bowls to brighten up the dish, and arrange the toppings on a platter for guests to customize their servings.
