1 pound ground beef

4 slices beef bacon

1 medium onion, finely chopped

1 bell pepper, diced (any color)

4 slices provolone cheese

4 fresh hoagie rolls

2 tablespoons mayonnaise

1 tablespoon yellow mustard

Salt and pepper to taste

Olive oil for cooking

Optional toppings: sliced tomatoes, lettuce, hot sauce

Cook the Beef Bacon: In a large skillet over medium heat, add the slices of beef bacon. Cook until crispy on both sides, about 5-7 minutes. Remove from skillet and drain on paper towels.

    Sauté Vegetables: Using the same skillet, add a drizzle of olive oil if needed and sauté the finely chopped onion and diced bell pepper over medium heat. Cook until softened, about 5 minutes.

      Prepare the Ground Beef: Add the ground beef to the skillet with the onions and bell peppers. Break it apart with a spatula and cook until browned, about 7-10 minutes. Season with salt and pepper to taste.

        Melt the Cheese: Once the beef is cooked through, sprinkle the provolone cheese over the meat mixture. Cover the skillet with a lid for about 2-3 minutes, allowing the cheese to melt.

          Assemble the Sandwich: Slice the hoagie rolls lengthwise without cutting all the way through. Spread mayonnaise and mustard inside each roll.

            Fill the Rolls: Spoon the chopped beef mixture into each roll, ensuring each sandwich has a good amount of cheese and veggies. Top with crispy beef bacon.
