To start, you will need one medium head of cauliflower. Cut it into small florets. Next, bring a pot of salted water to boil. Once boiling, add the cauliflower. Cook it for about five to seven minutes until it is tender. Drain the cauliflower and let it cool a bit.
Next, you want to remove extra moisture from the cauliflower. This step is key. Place the cauliflower in a clean kitchen towel and squeeze it tightly. You want it as dry as possible. This helps the bites get crispy.
In a large bowl, mix the drained cauliflower with one cup of shredded sharp cheddar cheese and half a cup of grated Parmesan cheese.
